I use tadkas the most when I make sabzis of all kinds. Be it a basic potato sabji, cauliflower, cabbage, capsicum…you name it. Today lets demonstrate it by preparing a simple aloo sabji. There may be slight variations in each, but the basic principle remains the same: add spices and other flavoring agents to hot oil so that there is a lovely infusion of flavors

we learned how to make potato curry without a tadka (potato/tomato sabzi – Batatya cha Bhujne). Today let’s make a dry sabzi with tadka.

Ingredients

  • 2 medium sliced potatoes
  • 1 tsp mustard seeds
  • 1tsp cumin seeds
  • 1tsp cumin seeds
  • 6-8 curry leaves
  • 1-2 green chilis chopped
  • 1/2 tsp turmeric, powder
  • green chilies
  • 1tsp sugar
  • salt to taste

    Directions

    Step 1 - Adding Tadka

  • Take a pan
  • add oil and let it heat on medium gas
  • add the mustard seeds and hear them sizzle.
  • immediately add the cumin seeds
  • add curry leaves & chopped green chillies
  • reduce the flame so that the spices don’t burn
  • add turmeric powder, salt and sugar
  • Mix it gently in hot oil
  • Step 2 - Add sliced potatoes

  • add sliced potatoes
  • Mix well and cover the pan on low-medium heat
  • cook till the potatoes are cooked completely
  • after 10-15 mins open and check. if the potatoes are cooked, take them off the gas.

    I love to have this aloo sabji with some chapati or a parotha. For rice lovers, the combination of steaming rice and dal tadka or even simple dal with along with this aloo sabji recipe is an exceptional combination. Add a curd raita along with it, make it a full meal.
