Lemon Chicken Curry

A chicken curry that requires no Indian masala, the coloured bell peppers, turmeric and lemon are all that is required to lend fresh flavours and colours to this chicken.

Ingredients

for marinate
  • 500 gm boneless chicken (cut into curry pieces)
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • salt to taste
  • for curry
  • 2 large-sized onions, chopped
  • 2 medium-sized capsicums (bell peppers), chopped
  • 3-4 green chillies
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 lemon
  • 1/2 tsp turmeric powder
  • salt to taste

    Directions

    Step 1 - Preparing the Marinate

    Mix well the chicken, garlic paste, ginger paste and salt. Keep it aside for at least 15-20 mins

    Step 2 - cook chicken in pressure cooker

  • Add the marinated chicken in a pressure cooker and add some water (100-150 mL)
  • Heat the cooker and allow 2 whistles so that the chicken is half-cooked
  • Step 3

  • As the cooker cools down, in the meantime, heat 3 tbsp oil in a large vessel
  • Add the onions and let them soften and become translucent
  • Add green chillies, ginger and garlic paste
  • Add capsicums, mix well and let it cook for 5-7 mins on medium heat
  • Step 4

  • Now add turmeric. Adding it now ensures that it doesn’t burn and lends a fresh colour to the disht
  • Add the chicken with a bit of water and let it cool for 15 mins or till chicken is cooked completelyt
  • add some salt if required (remember we have already added salt in the marinate)t
  • Squeeze the juice of the lemon and our chicken is ready!t
  • Extra Tips

    To make the lemon chicken curry thicker, you can mix a tsp of corn floor in a small cup of water and add it to the curry as it boils. this wont change the taste of the dish, but will give the curry the right amount of thickness.

    This lemon chicken curry can be enjoyed with some hot steaming rice. If you are not a fan of rice like how I am, I enjoy this recipe with white bread as well.
