This Egg Masala Curry or Anda masala is nothing but boiled eggs in a simple spicy tomato gravy. This is the 5th video in the Learn to Cook - Eggs series. In the series, you have seen so far that simply having eggs in your fridge can be an easy problem solver for a quick meal. Today let's take a step ahead and try to make the new dish by adding eggs in a curry.

The interesting thing about this dish is, you will find this on the menu in almost all places but the taste of it will differ form place to place. This egg masala recipe is just my version of the dish, if you have your version, please leave a comment below, I would love to try other versions of this dish.

For me, it's a go-to dish when you are not prepared or when there are some unexpected guests and you are taken completely off guard and don't know what to cook, this is the perfect recipe that you can cook in a quick time, it also looks very presentable and the best of it, it's tasty.

Egg Masala Curry

Ingredients

  • 6 Boiled Eggs
  • 1 small onion, chopped
  • 2 ripe tomatoes, chopped
  • fresh chillies as per your spice requirements
  • some curry leaves
  • 1 tsp ginger garlic paste
  • coriander to garnish
  • chopped coriander roots (optional)
  • spices

  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • salt to taste

    Directions

    Step 1 - Frying the eggs

  • In a pan, heat 2 tbsp oil
  • add all the boiled eggs and fry in the hot oil till they are slightly golden brown
  • keep the eggs aside for adding in the curry later
  • Step 2 - Prepare the Curry

  • In the same pan heat some oil, add mustard seeds, cumin seeds and let them sizzle
  • add onions and sauté well
  • add fresh chillies
  • add curry leaves and chopped roots of coriander
  • add ginger garlic paste, sauté well
  • add chopped tomatoes and cook till they are soft
  • add 1/2 tsp turmeric powder, red chilli powder, garam masala & coriander powder
  • Step 3

  • sauté well, & cook till the raw smell of the spices is gone
  • add the fried eggs and mix them delicately so that they are not broken
  • add a little water and salt to taste
  • cook for 2 mins
  • take it off the gas
  • garnish with coriander and serve with bread, chapati or rice, & enjoy!
